- ½ c. softened butter
- 1 egg, beaten
- ¼ c. milk
- 1 tsp. vanilla
- 1⅓ c. Sugar Substitute (Preferably Splenda)
- 1 c. flour
- 1 tsp. cinnamon
- ½ tsp. baking powder
- ½ tsp. nutmeg
- ¼ tsp. salt
- ⅛ tsp. baking soda
- 1 c. rolled oats
- 1 c. raisins (you may want chopped dates or nuts)
- Preheat oven to 350 degrees
- Soften the butter in the microwave for about 10 to 15 seconds
- In a large bowl mix together the butter, egg, vanilla, and sugar substitute
- After mixing, add in the cinnamon, baking powder, baking soda and salt and nutmeg and mix together
- slowly add the flour.
- Mix together and add the rolled oats
- When all ingredients make a cookie dough consistency, mix in the raisins
- Scoop spoonfuls onto your cookie sheet
- Put in the oven at 375 degrees for 10 to 12 minutes
- Let cool
