I have a small weakness for anything with chocolate or basically anything that resembles chocolate chip cookies. Ok, maybe not a small weakness but let’s say a moderate weakness. I like to make cookies once a week, and sometimes it’s nice to change it up a little. These Chocolate Oatmeal Bars are like making one big cookie in a pan. I love how these bars are a layer of cookie with the chocolate cooked on top. The fact that they were gone in a flash was a pretty good indicator that my family loved them!
If you want a treat that is not only easy to make but delicious, then you must give these a try.
- Cookie Layer:
- 1 cup butter
- 2 eggs
- 2 cups brown sugar
- 2 tsp. vanilla
- 2½ cups flour
- 1 tsp. baking soda
- 1 tsp.salt
- 3 cups quick cooking oatmeal
- Topping:
- 1 (12 oz.) pkg. milk chocolate chips
- 2 tsp. vanilla extract
- 2 Tbs. butter
- 1 can sweetened condensed milk
- ½ tsp. salt
- ½ cup chopped nuts (I used pecans)
- Preheat oven to 350 degrees.
- Spray a 9x13 pan with cooking spray.
- In a large bowl, cream together 1 cup butter, brown sugar, eggs and vanilla extract.
- Add the flour, salt, soda and oatmeal and mix well.
- Press into the prepared pan.
- In another bowl, melt 2 Tbs. butter and chocolate chips together.
- Add the sweetened condensed milk, vanilla, salt and nuts.and mix together until smooth.
- Pour over the cookie layer and spread evenly over the top.
- Bake for 20-25 minutes.
- Cool and cut into bars.
- ENJOY!

I’m not sure why its not printing for you. I opened the recipe up in another tab and clicked print and the recipe card opens up so I can print it. Is it not opening up in another tab for you at all? What browser at you using? Not sure if that would have anything to do with it or not. I’m sorry that you keep having that problem. I’m sure it’s so frustrating. But thanks for letting us know so we can look into it.
