I am always looking for new cookie recipes because I’m convinced that I still have not found the most perfect cookie in the world yet. I know it’s out there, and some of you might have cookies that you would claim to be the absolute best, but I might think otherwise. Don’t get me wrong, I have quite a few recipes of cookies that I already love and have discovered within the last few years, but considering that cookies just seem to keep getting better and better, then there has to be one that’s better than the best I’ve ever found. With that being said I wanted to try a new pumpkin cookie recipe. I decided to give these butterscotch pumpkin cookies a shot. No, they are not my most favorite cookie ever, but they are still pretty amazing. (Remember I’m really picky when it comes to cookies, so saying that it’s good means something).
What I love about these cookies is that it’s not too rich in pumpkin flavor, but still has enough pumpkin to make it a pumpkin cookie. Then you’ve got the oatmeal, and I’m a sucker for oatmeal in a cookie because I love how it gives it a different consistency than your typical chocolate chip cookie. To top it all off, these cookies are loaded with butterscotch chips. I love butterscotch flavor, so I was pleased with the flavor combo of pumpkin and butterscotch. These cookies are definitely worth trying.
- Pumpkin Butterscotch Cookies
- 1¼ cups flour
- 1 tsp. baking soda
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon salt
- ½ cup butter
- ¾ cup granulated sugar
- ¾ cup brown sugar
- 1 egg
- 1 tsp. vanilla
- 1 cup pumpkin puree
- 3 cups oatmeal
- 1½ cups butterscotch chips
- Preheat oven to 375 degrees.
- In a bowl mix together flour, soda, cinnamon, nutmeg and salt.
- Set aside
- In a separate bowl, mix butter, sugars, egg, vanilla and pumpkin together until blended well.
- Gradually stir in flour mixture.
- Add oatmeal and butterscotch chips and blend in well.
- Drop spoonfuls of cookie dough on to a cookie pan.
- Bake 10 minutes in a 375 degree oven.
- Let cool on pan 1 minute before moving to a cooling rack and cool completely
