Ingredients
  • Pumpkin Butterscotch Cookies
  • 1¼ cups flour
  • 1 tsp. baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt
  • ½ cup butter
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 cup pumpkin puree
  • 3 cups oatmeal
  • 1½ cups butterscotch chips
Instructions
  1. Preheat oven to 375 degrees.
  2. In a bowl mix together flour, soda, cinnamon, nutmeg and salt.
  3. Set aside
  4. In a separate bowl, mix butter, sugars, egg, vanilla and pumpkin together until blended well.
  5. Gradually stir in flour mixture.
  6. Add oatmeal and butterscotch chips and blend in well.
  7. Drop spoonfuls of cookie dough on to a cookie pan.
  8. Bake 10 minutes in a 375 degree oven.
  9. Let cool on pan 1 minute before moving to a cooling rack and cool completely
