Pumpkin Butterscotch Cookies

- Pumpkin Butterscotch Cookies
- 1¼ cups flour
- 1 tsp. baking soda
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon salt
- ½ cup butter
- ¾ cup granulated sugar
- ¾ cup brown sugar
- 1 egg
- 1 tsp. vanilla
- 1 cup pumpkin puree
- 3 cups oatmeal
- 1½ cups butterscotch chips
- Preheat oven to 375 degrees.
- In a bowl mix together flour, soda, cinnamon, nutmeg and salt.
- Set aside
- In a separate bowl, mix butter, sugars, egg, vanilla and pumpkin together until blended well.
- Gradually stir in flour mixture.
- Add oatmeal and butterscotch chips and blend in well.
- Drop spoonfuls of cookie dough on to a cookie pan.
- Bake 10 minutes in a 375 degree oven.
- Let cool on pan 1 minute before moving to a cooling rack and cool completely
