This BBQ Chicken Pizza Recipe is one of our go to meals at our house when we are hungry for something delicious, but don’t feel like putting a lot of work into dinner. These are so easy to make and my whole family loves them! There is never a complaint when it Mini BBQ Chicken Pizza night at our house. We also love to use english muffins to make other types of pizza as well. In Fact, the possibilities are endless! Just choose your favorite toppings and throw them on an English Muffin and you will have a delicious Mini Pizza in no time. We have enjoyed these English Muffin Pizzas since we were kids and it was always fun to help mom make these and get to be creative and choose our own toppings. Hope you enjoy them as much as we do !
- 1 bag English Muffins
- 2-3 cups Mozerella Cheese
- 1 bottle of your favorite BBQ sauce (we like Baby Rays original BBQ sauce)
- ½ red onion diced
- 1 package of Tyson ready made Grilled diced chicken
- Crumbled Bacon bacon cooked ( optional)
- 1 can Pineapple tidbits (optional)
- There is really not much to this recipe at all.
- Preheat the oven to 375 F
- Take your English muffins and split them in half or use a knife to cut them if needed
- Then spread about a tablespoon of BBQ sauce evenly on each Muffin with a spoon
- Next apply Mozzerella Cheese generously about ¼ c to each pizza
- Either let the frozen diced chicken thaw prior to making this or heat in a bowl in the microwave just until thawed
- Then pour about ½ cup of the BBQ sauce on the diced chicken and stir to coat the chicken pieces evenly.
- Distribute the chicken evenly between your english muffin pizzas ( about 4-5 pieces per muffin)
- Then sprinkle diced red onion and any additional toppings on each pizza according to your desired taste ( crumbled bacon and pineapple tidbits are our reccomendations but are not necessarry, these pizzas are just as delicious without them)
- Place in the oven on a cookie sheet sprayed with cooking spray or I like to put tin foil on my cookie sheet for a less mess clean up
- Cook for 8-10 minutes just until cheese is melted. If you want a crispier crust just let them cook for an additional couple minutes til lightly browned. This just depends on your personal preference.
- Let cool and serve
