Ingredients
- 2 cups boiling water
- 2 cups All-Bran cereal
- 1 cup cooking oil
- 3 cups sugar
- 4 eggs
- 1 quart buttermilk
- 5 cups flour
- 5 tsp. soda
- 1 Tbsp. salt
- 4 cups Bran Buds
- 1 cup nuts (optional)
- 2 cups raisins (optional)
Instructions
- Preheat the oven to 400 degrees.
- Soak the All-Bran in the boiling water for several minutes.
- While soaking, mix together the oil and sugar in a large bowl. (Make sure it's a large bowl because this will make a large batch.)
- Add the eggs, buttermilk, and soaked bran.
- Sift together the flour, soda, and salt.
- Gradually add the flour mixture to the bran mixture.
- Add the Bran Buds and fold in till mixed well. (Add the nuts and raisins at this time also if you like.)
- Spray a muffin pan with cooking spray, and fill each muffin cup.
- Bake for 15 minutes.
- Cool for about 5 minutes before popping out of the muffin pan and cooling on a rack.
Notes
This batter can stored in the refrigerator for a couple of weeks.

Halved (more or less) the recipe and it was still FANTASTIC and a wonderful way to use up a cup of bran flakes (ground fine in food processor) left from a large box. Considered pressing some dark brown sugar and finely ground nuts on top but the batter was plenty sweet as it was. It made 12 medium muffins and one small loaf because I only own two muffin tins with six muffin cups each. 🙂
