This time of year I sure love a good Chicken Salad Sandwich! I like to make a big batch of this chicken salad and have it on hand to eat on sandwiches or even on a bed of lettuce. The grapes give it just the right balance of sweetness, and I just love the crunch it has! I really enjoy eating this Chicken Salad on croissants, but it is also delicious on Hawaiian rolls. My family loves these sandwiches just as much as I do, and when it is just too hot to cook, this Chicken Salad Croissant recipe is super simple to make and makes for the perfect, refreshing summer meal!
- 4 cups diced cooked chicken
- ½ cup chopped onion
- ½ cup chopped green pepper
- 1½ cups dried cranberries
- 1½ cups grapes sliced in half
- 1 cup chopped celery
- 1 cup mayonnaise
- 1 tsp. paprika
- 1 tsp. seasoning salt (Lawry's)
- Pepper to taste
- 1 cup chopped pecans (optional)
- In a large bowl combine the chicken, onion, green pepper, cranberries, grapes, celery and nuts.
- Mix together the mayonnaise, paprika, seasoning salt and pepper.
- Pour into the chicken mixture and toss well.
- Serve on Hawaiian rolls, croissants or eat as a salad on a bed of lettuce.
- Yummm!
