When fall comes around, I can’t get enough of anything with pumpkin in it. There are so many great pumpkin recipes out there, that I can make a new one every day for a month. This pumpkin bar recipe is one of my favorites that I make each year.
They are called pumpkin bars, but they are a lighter version, more like a cake.
I have had this recipe for years and every time I make them, they seem to disappear way too fast.

Serves: 24 bars
Ingredients
- Cookie Ingredients
- 4 eggs
- 1⅔ cup sugar
- 1 cup oil
- 1 (16 oz) can pumpkin
- 2 cups flour
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 tsp. baking soda
- Frosting Ingredients
- 1 8 oz package cream cheese
- 6 Tbsp. butter
- 1 Tbsp. milk
- 1 tsp. vanilla
- 3 cups powdered sugar
Instructions
- In a bowl, beat eggs, sugar, oil and pumpkin until light and fluffy.
- In a separate bowl, stir together flour, baking powder, cinnamon, salt and soda.
- Add to the pumpkin mixture and mix thoroughly.
- Spread in a greased 15x10 pan.
- Bake at 350 degrees for 30 minutes.
- Cool.
- Cream Cheese Frosting
- Beat cream cheese, butter, milk and vanilla.
- Add powdered sugar.
- Beat till smooth.
- Spread over cooled bars.
- Makes 24-32 bars depending on how you cut them.
