Fresh Peach Pie Crumble…now here’s a recipe I never imagined myself making, especially considering that I am not much of a pie lover. There are so many other desserts that I would much rather waste my empty calories on.
However, when my grandpa gifted us with a giant box full of fresh peaches last week, I knew it was time to get creative and discover some new recipes that involve peaches. I mean, as delicious as fresh picked peaches are, it’s just hard for a small family to consume a whole box of them before they go rotten. So this week it was time to put my thinking cap on and get to work in the kitchen. My mom immediately recommended baking a peach pie. At first I turned my nose up at the idea, because just the mention of it felt like way too much work. I’m all about the easy peasy recipes, and believe it or not, I do not enjoy spending hours slaving in the kitchen over the hot stove. Especially to make a pie that I may not even like.
The other thing is…I’m just not a baker. Baking is not my forte, and I usually leave that territory to my sister Becky. She’s a rock star when it comes to baked goods. I would so much rather cook up a savory meal than spend my time baking. However, despite all this, I somehow found myself scanning the internet for peach pie recipes. I guess I felt a duty to at least try to appease my mother’s request. Cooking a pie was really the last thing I wanted to do, because time spent in the kitchen is very limited when you have 2 little rascals running around, climbing up walls and furniture, and tugging on your pant leg constantly. Without fail, every time I cook, my 16 month old son always manages to wedge himself in between my legs and then clings to my leg like his life depended on it. Apparently anything I’m doing is far more interesting than any of the millions of cool toys he’s got sitting around. Honestly, Sometimes I wonder why I even bother to buy toys.
Anyways, the point to all my rambling is to convey the fact that I really do not like cooking complicated recipes that suck up all my time and energy. Easy is good, and making a peach pie did not sound like an easy task at the time.
However, when I happened upon this recipe from the neighborhoodfoodblog.com for a Peach Crumb Pie I quickly changed my mind.
It looked so simple and delicious…. and in fact it looked so simple that I kept reading the directions over and over expecting to find some hidden step that I was somehow missing. Surely it could not be this easy? I scanned the ingredients and realized I had all the ingredients in my cupboard already, and by that time I realized I had completely run out of excuses for not making this Fresh Peach Pie Crumble, and so I decided to get to work.
And I did it! I made a Peach Pie Crumble, and it turned out so absolutely amazing!!! My whole family was raving about this recipe, and of course I was beyond elated. How could I not be? I had found a recipe that was super easy, yet such a delightful treat for the taste buds. I had completely underestimated myself again, and now I’m actually excited to take another stab at making pies. Maybe baking isn’t as bad as I made it out to be. - 5- large peaches or 7 smaller peaches
- 9" frozen pie crust
- 1 cup flour
- ¾ c. brown sugar
- ¾ c. white sugar
- ½ c. butter melted
- 1 tbsp corn starch
- 1 teaspoon cinnamon
- ½ teaspoon ginger
- 2 pinches salt
