Crunchy Pea Salad

 

When I saw a recipe for Pea Salad, I thought really?  A whole salad out of peas?  Well, it is true, you can make a salad out of peas!  Of course, with the addition of nuts, and craisins and bacon, this turned out to be absolutely delicious!  I wasn’t sure how the family was going to react to it, but after dinner was over, they kept picking at.  That is always a good sign! This recipe comes from family.go.com website. The next time I make this though, I think I will add some chopped cauliflower to add a little more color!

Crunchy Pea Salad

Ingredients
  • 1 10oz. box frozen sweet peas, thawed and drained
  • 1 cup peanuts
  • ¼ cup chopped greens onions
  • 1 lb. bacon cooked and crumbled
  • 1 cup craisins
  • ½ cup mayonaise
  • 1 Tbsp. plus 1 tsp. of vinegar
  • 1 tsp. sugar
  • ground pepper to taste
  • ¼ tsp. Maggi seasoning (I couldn't find it, but the substitute for it is even amounts of soy sauce and worcestershire sauce.) That is what I added.
  • Optional ingredients for salad: 1 cup chopped cauliflower, ½ cup celery. If you add more ingredients you might want to make a little extra sauce to mix in.
Instructions
  1. Whisk together the mayonaise, vinegar, sugar, pepper and Maggi seasoning together in a bowl.
  2. Add the mixture to the other ingredients and toss well.
  3. Chill for at least 1 hour before serving!
  4. Soooo good!

    there is 1/2 cup of craisins then it calls for 1 cup of craisins.
    Was there something else in one of the craising? 1/2 cup of something or 1 cup of something besides craisins.

    I played around with this salad a bit. I used the full amount of peas and dressing, but halved the rest of the ingredients. I also threw in some sunflower seeds and grated cheddar cheese. I looked at the original recipe at family.go.com and used their idea of using balsamic vinegar. I didn’t have any peanuts, but would like to try it again with them because I think that would take it over top. As it was, I really enjoyed this salad. It’s like a fun twist on traditional broccoli salad. Thanks for the great recipe!

    I will be trying but either a print or recipe with photo I am busy and it was more trouble to jump through hoops to get recipe. Looks great never heard of Maggie Seasoning will be looking thank you!!

    I bet this would also be good if you used other nuts, such as walnuts or pecans. Also chopped Broccoli would be good along with some type of shredded cheese. The additional or substitute ingredients are actually unlimited. I can’t wait to try this, I love using Peas in salads.
