Just before New Years my mom and I were trying to come up with some tasty appetizers  to ring in the New Year. We are big fans of making stuff with Pillsbury crescent rolls. They are just so easy, and delicious, and the possibilities are endless with them. These Ranch Chicken Roll Ups were a total experiment that ended up being a big hit.  Adding the Hidden Valley Ranch flavoring gave it such great flavor and If I was completely selfish (I’m only partially selfish)I could have easily finished these off all by myself, and I wouldn’t have to feel too guilty because they contain spinach right? Gotta get my greens in! 😉
I love that the these Ranch Chicken Roll Ups are just the right size to pop in your mouth. They’d make a great appetizer at any holiday party and even super bowl party. I’ve decided I’m going to try making these again, but I want to make them full size and serve them as an entree for dinner. Maybe I could even convince my 2 picky eater toddlers to given them a try too. That might be too much to hope for though. I never know what to expect with them. One day my daughter is refusing to eat anything but the berries in her Captain Crunch with Berries cereal…the next she refuses to eat anything but the yellow captain crunch pieces. So who really knows 😉
- 1 can Pillsbury crescent rolls
- 8 oz cream cheese (softened)
- ½ package Hidden Valley Ranch Dip mix
- 1 cup baby spinach
- 4 slices swiss cheese
- 10 oz Tyson Grilled and Ready pulled Chicken breast ( about half a bag)
- Preheat oven to 375 degrees
- Pop the Pillsbury crescent roll can (my favorite part) and spread the rolls out on a cutting board or clean counter top
- Cut each crescent roll triangle in half so that you have double the amount of triangles
- Put the pulled chicken in a bowl and warm up in the microwave for about 1-2 minutes, just to unthaw the chicken
- In a bowl whip softened cream cheese together with Hidden Valley Ranch Dip mix
- then add in pulled chicken and mix well
- Cut up each Swiss cheese slice into 4 squares
- On the large end of each crescent triangle place a square of cheese
- Spoon a little less than a tbsp of the chicken cream cheese mixture on top of the cheese, and then cover with 3 baby spinach leaves
- Roll the crescent roll up trying to contain the filling the best you can
- Place on a lightly greased baking sheet and repeat with all the other rolls
- Cook at 375 degrees for 12-15 minutes or until rolls are a light golden brown on top
