Fajitas around my house are a pretty popular thing. There are times that I literally make them once a week and no one ever seems to get tired of them. I have a pretty simple way of making my fajitas since I use frozen chicken that has been seasoned already. I love the easiness of using already seasoned chicken.
I was thinking of a way to mix it up a little, so I thought why not make my fajitas into a pizza. Everyone was really happy with what I call my Chicken Fajita Pizza! Mixing two of my favorite things, pizza and fajitas turned into a big hit.
- Crust:
- 1 pkg. active dry yeast
- 1 cup warm water
- 2½ cups flour
- 2 Tbs. oil
- 1 tsp. sugar
- 1 tsp. salt
- Topping:
- 1 package frozen Tyson Fajita Chicken Strips, thawed
- 1 cup salsa
- 1 large green pepper, sliced
- 1 large red pepper, sliced
- 1 large onion, sliced
- 2 cups shredded Monterey Cheese
- Crust:
- In a large bowl, dissolve yeast in the warm water.
- Add in the flour, oil, salt and sugar and mix together until it forms a soft ball. Knead until smooth,
- Cover and let rest for about 15 minutes.
- Lightly dust a 16 inch pizza pan with corn meal.
- Roll the dough out and press into the pizza pan.
- Prick the dough several times with a fork.
- Bake for 6-8 minutes in 425 degree oven.
- In a large skillet, saute the chicken in about 1 Tbs. oil.
- Add the peppers and onions and saute until lightly tender.
- Spread salsa on the crust.
- Layer the chicken, peppers and onion evenly on the pizza.
- Sprinkle the cheese on top.
- Bake for another 16-18 minutes or until the crust is golden brown.

- Note: You can use a pre-made pizza crust if desired.
