Chicken Fajita Pizza

This Chicken Fajita PIzza is a great substitution for the usual fajitas, and was a big hit at my house!

Ingredients
  • Crust:
  • 1 pkg. active dry yeast
  • 1 cup warm water
  • 2½ cups flour
  • 2 Tbs. oil
  • 1 tsp. sugar
  • 1 tsp. salt
  • Topping:
  • 1 package frozen Tyson Fajita Chicken Strips, thawed
  • 1 cup salsa
  • 1 large green pepper, sliced
  • 1 large red pepper, sliced
  • 1 large onion, sliced
  • 2 cups shredded Monterey Cheese
Instructions
  1. Crust:
  2. In a large bowl, dissolve yeast in the warm water.
  3. Add in the flour, oil, salt and sugar and mix together until it forms a soft ball. Knead until smooth,
  4. Cover and let rest for about 15 minutes.
  5. Lightly dust a 16 inch pizza pan with corn meal.
  6. Roll the dough out and press into the pizza pan.
  7. Prick the dough several times with a fork.
  8. Bake for 6-8 minutes in 425 degree oven.
  9. In a large skillet, saute the chicken in about 1 Tbs. oil.
  10. Add the peppers and onions and saute until lightly tender.
  11. Spread salsa on the crust.
  12. Layer the chicken, peppers and onion evenly on the pizza.
  13. Sprinkle the cheese on top.
  14. Bake for another 16-18 minutes or until the crust is golden brown.
  15. ENJOY!
  16. Note: You can use a pre-made pizza crust if desired.
