I was a little skeptical about making these pita pockets with curry in them. I love curry, but wasn’t sure this combination was going to work. The curry combined with the sweetness of the grapes were perfect! I was so excited at how these turned out. These Chicken Curry Pita Pockets were a big hit with the family! This is great to prepare ahead of time, and made for such an easy and delicious meal! LOVED THEM! Give it a try!
Chicken Curry Pita Pockets

Ingredients
- ¾ cup mayonnaise
- 1 tsp. Soy Sauce
- 1 tsp. lemon juice
- ½ tsp. curry powder
- 1 small onion finely chopped
- 2½ cups diced chicken (I used a Rotiserrie chicken)
- 1½ cup green seedless grapes halved
- ¾ cup chopped celery
- ½ cup sliced almonds
- 10 pita pocket halves
- 10 lettuce leaves
Instructions
- Combine the mayonnaise, soy sauce, lemon juice, curry powder and onions. Mix well.
- Add chicken, celery and grapes. Refrigerate till ready to serve.
- Add almonds just before serving.
- Cut your pita pockets in half, and add a slice of lettuce inside.
- Fill each pocket with ½ cup of chicken salad.
