Every winter I have the hardest time staying warm.  I live in Utah and it can get really cold.  This last week was Zero degrees when I left for work in the morning.  Having been raised in warm, sunny California, I have always had a hard time with winter.  You would think after living here for 24 years that I would love the snow, but it is just the opposite.  I would love to retire somewhere warm and sunny and never have to shovel snow again.  Oh well, I guess I can dream for now.  With that in mind, I find myself craving warm yummy soups during the cold months.  This Chicken and Corn Chowder is a recipe I found in one of my old recipe books.  I changed it up just a little and found it to be absolutely delicious! I served it up with some french bread, and it absolutely hit the spot for me.
I love to use precooked  chicken when I make my soups because of the time factor.  I work all day and I love to be able to just throw in the ingredients and go.  This soup works great for that reason.  So until I find my tropical Oasis sometime in the future I will keep making yummy soups to warm me up.
For now I will just have to settle with enjoying every last savory bite of this soul warming Chicken and Corn Chowder. I know…I’m sure you all feel super bad for me right now, but I’ll manage somehow 😉
- 1 bag Tyson frozen cooked diced chicken
- ½ onion chopped
- 2 Tbsp. butter
- 3 cups milk
- 2 cans cream of chicken soup
- 1 can corn, with liquid
- 1 tsp. chicken bouillon
- 1 tsp. salt
- 2 Tbsp. diced green chilies
- In a large pot, saute the onion in the butter until soft.
- Add the soup, milk, corn, bouillon, salt, green chilies and chicken.
- Simmer until heated through and the chicken is cooked.
- Easy and delicious!
