There are several treats that just scream my name around the holidays, and one of them is fudge. I love that fudge is really pretty easy to throw together and also makes a great treat for friends and neighbors.
The most time consuming part of this Cashew Caramel Fudge is having to remove the wrappers from the caramel. I remember as a kid that being my job whenever my mom would make something that required caramels. I usually didn’t mind though because I was able to sneak a few to eat. It’s also definitely worth the extra money to buy the cashews to put in the fudge because I love the flavor they add.
It’s hard to say I have just one favorite fudge recipe because I love them all, but this on is definitely close to the top.
- ½ cup butter
- 1 (5 oz.) can evaporated milk.
- 2½ cups sugar
- 1 (7 oz.) jar marshmallow creme
- 24 caramels, unwrapped and cut in fourths
- 1 cup salted cashew halves
- 1 tsp. vanilla extract
- Line a 9x9 square baking pan with aluminum foil and grease the foil with butter.
- Before starting recipe, unwrap the caramels and cut them into fourths. (a pair of scissors works well)
- In a saucepan, combine the milk, sugar and butter and heat until the sugar is dissolved.
- Bring it to a boil and cook for 5 minutes, stirring constantly.
- Remove it from the heat and stir in the marshmallow creme and chocolate chips and blend well.
- Stir in vanilla then add the cashews and caramels.
- Pour into the greased pan and cool completely.
- Cut into squares and ENJOY!
