The other day the cafe at my work (Utah Valley Hospital) was serving this very delicious mustard crusted chicken and so I decided to come home and try to copy cat it. This is what I came up with. I think I did a pretty darn good job. Though it doesn’t taste exactly like the chicken I had at work I thought mine was even better and it is an original recipe made up by me. I liked it so much that I am actually counting down the minutes right now til lunch time so that I can have some left overs. I was even tempted to eat it for breakfast cuz I could hardly wait.
- 4 chicken breasts
- ½ cup honey mustard
- ½ cup Mayo
- ⅛ to ¼ cup yellow mustard ( depending on how mustardy you want it)
- 2 tbsp melted butter
- bread crumbs
- Stove Top corn bread stuffing mix
- Preheat oven to 375 degrees.
- Rinse and cut chicken breasts in half.
- Mix honey mustard, mayo and yellow mustard in a bowl and then pour over chicken in a glass cooking pan. Roll chicken in mustard mixture so that the chicken breasts are evenly coated on all sides.
- Mix ½ package stove top with ½ c bread crumbs then pour evenly over top of chicken. Roll the chicken around a bit so that the bread crumbs and stove top are coated on all the pieces.
- Pour melted butter over the top.
- Cover with tin foil and cook for 30 minutes
