It decided to rain all day today, so I thought this was a good opportunity to do some baking. 聽Looking in my pantry, I saw that I still had several cans of pumpkin puree leftover from last year. 聽I guess I feel justified now to make something with pumpkin since the air has that fall feel to it. 聽These Oatmeal pumpkin cookies are one of our favorites! 聽They are chewy and delicious and they also make the house smell wonderful!! 聽We like to mix it up and put chocolate chips in them one time, and then the next time we make them we put raisins in them. (My husband loves them with raisins, and my sons love them with chocolate chips..I guess it depends on who is the nicest to me that day, hee hee) 聽Anyways, these Oatmeal Pumpkin Cookies made the perfect treat for a rainy day!
- 1 cup butter, softened
- 1 cup brown sugar
- 1 cup sugar
- 1 cup pumpkin puree
- 1 egg
- 1 tsp. vanilla extract
- 2 cups flour
- 1⅓ cups oatmeal
- 1 tsp. baking soda
- 1 tsp. cinnamon
- ½ tsp. salt
- Optional choices: ¾ cup semi sweet chocolate chips, ¾ cup raisins, ½ cup chopped nuts
- Mix together the flour, oats, salt, baking soda and cinnamon in a bowl. In a mixing bowl blend together the butter and sugars until fluffy. Add the pumpkin, egg and vanilla extract and mix well. Add the flour mixture and mix. Add your choice of chocolate chips, raisins, nuts or all of them if you like.
- Line a large cookie pan with parchment paper. (This really is the best for cooking cookies, they don't stick or brown too fast.) Drop spoonfuls of dough on the pan, I usually will get 12 cookies on one pan, and bake in a preheated 350 degree oven for 14-16 minutes. Cool on a wire rack.

Just baked these tonight with my husband. They were delicious! Just enough sweetness, and the oatmeal blended so well. So sorry we’ve taken a minute to get back to to you. But I always just use the quick oats. The mix in well with all the other ingredients. I’m sure the old fashion oats would work fine as well.

Made these cookies today. Love the moisture that the pumpkin provides. I made some plain and then added pecans and orange scented craisins to the last half of the batch. The flavor of the pumpkin is so mild any stir in would be perfect. Next time I make them I will try craisins and white chocolate chips…yummy
