It’s always interesting the things you remember as you grow older, especially when it comes to food. Different tastes and smells can bring me back to specific times in my life, and make me remember something I haven’t thought of for years.
For some reason, these little Pineapple Cream Cheese Finger Sandwiches stick out in my mind. My mom used to make these when I was growing up.

Pineapple Cream Cheese Sandwiches for Special Occasions
She would make these pineapple cream cheese finger sandwiches for special occasions, usually when we were entertaining friends or family. I remember thinking that these were weird cream cheese sandwiches, but boy did I love them!
Finger Sandwiches or “Tea Sandwiches”
My mom used to call these pineapple cream cheese sandwiches “tea sandwiches”. Â They were made to be served at tea parties. We never really had tea parties, but when my mom entertained they were usually on her list.
We loved the colors, and the fact they taste great only adds to the appeal. These make the perfect little finger sandwiches for a brunch, baby shower, or holiday party. Or get creative and start using them for tea parties of your own!

This did not turn out well!! Do you drain the pineapple?? I ended up with wasted ingredients and a soggy mess!
mary says
hon, you have to drain it.
Teresa Varela says
and drain it really well. you can save the juice for using in place of water for a pineapple cake or muffins or just drink it.

I really enjoyed this recipe very much. Just the right amount of sweetness. I drained the pineapple and reserved the juice in case I needed to add more to make the spread to my preference. Next time I make this I will add just a touch less than a tablespoon of pineapple juice. I think next time I will try using 3/4 cup of nuts, just because I would have like a few less nuts in the spread. This is a recipe that is definitely a keeper.

When mixing pineapple with cream cheese, not only drain the pineapple and reserved the juice but also squeeze pineapple in paper towel. This works really well.
