Can’t think of a better name for a recipe than one that has your own name in it! Get it…Shepherd’s Pie…haha. It’s a good thing that this recipe is absolutely delicious too, otherwise I don’t think I would want to associate my name to it. A few years ago, I was helping a group of youth raise money for a camp, so we made a cookbook and sold copies. This Shepherd’s Pie recipe came from one of the other leaders in our group and has since been one of my favorites! It is a super easy dinner idea for those busy nights when you don’t have much time to cook.
- 1 lb. ground beef
- 2 cans Tomato Soup
- 1 can green beans (I use cut green beans)
- ½ onion, chopped
- 4 cups mashed potatoes (fresh is the best)
- 2 cups shredded Cheddar cheese
- Salt and pepper
- Brown the hamburger with the chopped onion. Drain off the excess fat.
- Add the soup, green beans and season with salt and pepper.
- Top with the mashed potatoes, making sure to cover all of the hamburger.
- Sprinkle the cheese on top and bake in a 350 degree oven for 30 minutes.
- I like to let it cool slightly before serving.
