I don’t know why meatloaf gets such a bad rap, because I love meatloaf! This mini meatloaf recipe makes just the right sized meatloaf for individual servings. Not only do they cook faster, but they are so easy to serve and if there are only two of you, you can put the rest in the fridge and eat them for another meal the next day. I cook these in a jumbo 6 muffin tin. When done cooking just pop them out, pour some of my meatloaf sauce over the top and enjoy! I love meatloaf!!!

Mini Meatloaf

Ingredients
- Mini Meatloaf
- 2 lbs extra lean ground beef
- 1 onion finely chopped
- 2 eggs
- ½ cup bread crumbs
- ¼ cup chili sauce
- 1 tsp. salt
- ½ teaspoon pepper
- ½ teaspoon garlic salt
- Meatloaf Sauce
- ½ cup ketchup
- ¼ cup brown sugar
- 1 Tbsp. mustard
Instructions
- Preheat oven to 375 degrees.
- Mix ground beef, onion, eggs, bread crumbs, chili sauce, salt, pepper, and garlic salt together till well blended. (I use my hands).
- Lightly grease 1 jumbo 6 muffin pan.
- Put meat into each muffin and gently pat down.
- Cook in 375 degree oven for 35-40 minutes.
- Let rest 10 minutes before pulling out of pan.
- Meanwhile, mix ketchup, brown sugar and mustard together in a small pan.
- Heat on medium until bubbly
- Pour over top of each mini meatloaf
- Enjoy!
