These little French Toast Bites are perfect for a brunch when you would like to serve finger foods. My friend at work introduced me to these little wonders. We couldn’t stop sneaking one here and there during the day because they were so good. These are quick and easy to make and are guaranteed to disappear fast! My family loves these and one thing that makes them good, is you can also freeze them, so make a bunch and have them ready for a future treat!
French Toast Bites

Ingredients
- ⅓ cup shortening
- ½ cup sugar
- 1 egg
- 1½ cups flour
- 1½ teaspoons baking powder
- ½ teaspoon salt
- ¼ teaspoon nutmeg
- ½ cup milk
Instructions
- Heat oven to 350 degrees.
- Grease or Pam your mini muffin tin.
- Mix thoroughly shortening, sugar and the egg.
- Stir in the flour, baking powder, salt and nutmeg alternately with milk.
- You can use a small cookie scoop to fill the tins or use a spoon and fill ⅔ full.
- Bake 12-15 minutes.
- While baking, mix up sugar and cinnamon, (about ¼ cup sugar and add cinnamon to your liking.)
- Melt 1 cube butter. When muffins are done and still very warm roll the muffins in the melted butter and then into the sugar cinnamon mixture.
- Pour yourself a glass of milk and enjoy them warm!!
