These banana poppy seed muffins make a great breakfast treat. I’m always looking for something new and different to try to feed my family breakfast on the weekends. These definitely did not disappoint me. These poppy seed muffins were so good and the citrus glaze certainly spices up the flavor! I will be making sure these muffins are on my recipe cycle for my family.

Ingredients
- MUFFINS
- 2 cups flour
- 1½ Tbsp. poppy seeds
- 2 tsp. baking powder
- ½ tsp. salt
- 2 ripe bananas, mashed (about 1 cup)
- 1 egg
- ¾ cup sugar
- ¼ cup oil
- 2 tsp. orange zest, grated
- CITRUS GLAZE
- 1¼ cups powdered sugar
- ¼ cup orange juice
- 1 tsp. orange zest, grated
- 1 tsp. vanilla
Instructions
- Preheat oven to 375 degrees.
- Grease a 12-cup muffin pan.
- In a large mixing bowl, combine bananas, egg, sugar, oil, and tsp. orange zest. Mix well.
- Add flour, poppy seeds, baking powder, and salt and mix until thoroughly blended.
- Spoon batter into muffin cups ¾ full.
- Bake for 20 minutes.
- While muffins are baking, mix the glaze mixture till smooth.
- Drizzle over muffins after they have finished cooking and warm.
