Banana Nut Pudding Cookies

Ingredients
- ¾ cup butter, softened
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 2 eggs
- 1 large banana, mashed
- ¼ cup sour cream
- 1 tsp. vanilla
- 1 (3 oz.) box banana cream instant pudding
- 2½ cups flour
- 1 tsp. baking soda
- ½ tsp. salt
- ¾ cup white chocolate chips
- ½ cup chopped walnut
- Sugar for sprinkling
Instructions
- Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper.
- In a large mixing bowl, cream together the butter and sugars. Add the banana, eggs, vanilla, sour cream and mix well. Mix in the pudding mix.
- Gradually add the flour, soda and salt.
- Mix in the chocolate chips and nuts.
- Since these are little more gooey than regular pudding cookies, I just drop them on to the cookie sheet rather than try to roll them into balls.
- Sprinkle the cookies with sugar.
- Bake for 10-12 minutes. ( I like my cookies a little undercooked so I cook them for 10 min.)
- Cool on a wire rack.
