Mom's Tamale Pie
Author: Sugar n' Spice Gals
Recipe type: Main
Ingredients
- 1 cup chopped onion
- 1 cup chopped green pepper
- 1 Tbsp. fat (that was on the recipe card, I used olive oil)
- ¾ lb. ground beef (I used 1 lb. since it is sold in pound packages)
- 2½ cups canned diced tomatoes
- 1½ cups whole kernel corn, drained (1 can)
- ½ cup chopped black olives
- 1 clove garlic, minced
- 1 Tbsp. sugar
- 1 tsp. salt
- 1 tsp. chili powder
- dash of pepper
- 1¼ grated sharp American cheese (I used a Mexican blend)
- 1 recipe corn meal topping (I used a box of Jiffy corn muffin mix prepared according to package directions, but not cooked. My mom used to make hers from scratch, but she didn't include the directions so I substituted the corn muffin mix)
Instructions
- Fry onion and pepper in the oil till soft. Add hamburger and brown. Drain any excess fat from the meat.
- Add tomatoes, corn, olives, garlic and seasonings.
- Simmer 30 minutes or until slightly thick.
- Add cheese and mix well.
- Pour into a greased 2 quart casserole dish.
- Pour muffin mix batter on top and spread to cover the top.
- Cook in a 375 degree oven for about 30-40 minutes, or until the top is lightly browned and cooked through.
- Check to see if it is done at about 30 minutes and go from there.
- Happy Memories!

Mom would never have made this with me around unless she omitted the dreaded onions.

Aw…thanks for sharing this recipe…brought back memories. My mom made this at our request all the time. Delicious! I lost her recipe, so will try this one for sure!

I use Alberts corn meal, recipe on the box. I also add diced green chilies. I don’t put cornmeal mixture on the bottom anymore like my mom did, trying to cut out some carbs.
