Every once in a blue moon I get brave and start throwing ingredients together completely on a whim, without following any recipe. Sometimes if I’m lucky, it turns into a delicious masterpiece (other times it doesn’t go quite so well). My husband is always amazed that I can just throw stuff together and have it turn out so delicious. Especially since the only thing he knows how to cook is spaghetti and marinara sauce from a jar ( needless to say, this becomes our main staple when I’m pregnant and don’t want to cook). Hey, at least it’s better than nothing. He likes to tease me sometimes by telling me that the only reason he married me was because of my “amazing” cooking skills. He always says that I stole his heart on our 3rd date when I cooked BBQ chicken pizza for him. He knew it was “true love”, because even though I slightly burnt the pizza (probably because I was too busy kissing him) it still tasted “amazing”. LOL….Glad he was so easy to win over. However, I have a hunch that the kissing might have had something to do with it as well. 😉
A few days ago I had one of these brave moments. On a whim started putting these Smothered Green Chile Burritos together. I had planned to cook something else that day, but then saw the tortillas in the fridge and suddenly I found myself in the middle of a big burrito mess. Luckily, that mess paid off with great dividends. I really love how these Smothered Green Chile Burritos turned out, and my family was very pleased with the results as well.
Don’t take my word for it though. Go ahead and try this Smothered Green Chile Burrito recipe out for yourself. And if you are single and looking to win over the heart of a special someone, this recipe just might come in handy. You never know what could happen 😉
For those of you more health conscious individuals out there you could make this a healthier dish by substituting the sour cream with light sour cream, reducing the cheese by about 1/2 cup, and using lean ground turkey instead of ground beef. I actually tried making it both ways, and the healthier version was still very tasty.
- 8 Mission flour tortillas (soft taco size)
- 1 can refried beans (or 1½ cups of my homemade refried white beans)
- 1 lb ground beef
- ½ package mild taco seasoning
- 1 tsp onion powder
- 1 green pepper (diced)
- 1 red bell pepper (diced)
- 1 package Uncle Ben's Ready Brown Rice (pre heated in microwave)
- ⅓ c. canned green chilies (diced)
- 2 tbsp sour cream
- ½ lime (juice only)
- 2 cups pepper jack cheese
- Green Chile Sauce
- 1 can Green enchilada sauce
- ¼ cup sour cream
- ½ lime (juice only)
- Preheat oven to 350 degrees F
- Brown ground beef in a frying pan with about ⅔ of red bell pepper diced as well as ⅔ of the diced green pepper (set aside the rest to sprinkle on top later)
- When browned drain excess grease if needed, and add ½ package of mild taco seasoning and 1 tsp onion powder and mix in well
- Set seasoned ground beef aside
- Heat Ready rice in microwave for 1½ minutes
- In bowl combine preheated rice, green chilies, 2 tbsp sour cream, juice squeezed from ½ of a lime, and salt and pepper to taste
- On each flour tortilla first spread ¼ cup refried beans with rubber spatula, cover with ¼ cup rice mixture, and ⅓ cup seasoned ground beef, and top it off with approximately ⅛ cup shredded Pepperjack cheese
- Fold ends of tortilla in and roll into a burrito
- Place in lightly greased 9x13 casserole dish (with open end of tortilla facing down to help keep from unraveling)
- Do this with each tortilla and fit them snuggly side by side in casserole dish
- In small bowl mix 1 can green enchilada sauce, ¼ cup sour cream, and juice from ½ a lime squeezed)
- Drizzle this sauce evenly over the top of the burritos (spread with rubber spatula if needed)
- Top with remainder of shredded pepper jack cheese followed by remainder of diced green and red peppers
- Cook for about 30-40 minutes AT 350 degrees until cheese is melted and heated through
