This Fresh Bean and Avocado Salsa recipe is a must have! No….like seriously…you might die after you try it. My husband’s cousins (Heather and Lindsey) brought this to a baby shower one time and it was such a big hit that I had to have the recipe. Since then, I have served it at several different social events and it has been a big hit every single time. I have yet to make it without someone begging me for the recipe, and this is hands down the dish I get the most requests for to bring to summer barbecue’s and social events. It’s one of those salsa dips that will make you keep going back for more…and more…and more….and then some more after that. So eat with caution…because once you start you just can’t stop! Atleast it is full of fresh nutrient rich ingredients, so you don’t have to feel too guilty if you happen to down a whole bowl of this stuff…right? Well maybe a whole bowl is a little much, but it is pretty good for you if you eat it in moderation. Just another reason why I LOVE, LOVE, LOVE this stuff! Serve this avocado dip as a side dish or appetizer with tortillas chips for dipping and you are sure to be the talk of any party. Great for summer barbecues as well!
Avocado Bean Dip (Texas Caviar)

Ingredients
- 5-6 Tomatoes
- 1 can sweet corn
- 1 can black beans
- 1 can great northern white beans
- 4 small avocados (or 2 large)
- ½ red onion
- 1-2 tbsp chopped Cilantro
- ½ bottle Italian dressing
Instructions
- Drain and rinse beans and corn thoroughly.
- Dice tomatoes, avocado, and red onion.
- Combine all ingredients together in a bowl and pour Italian dressing in.
- Mix well and Serve
Notes
Tips: If you are not going to serve this dip right away then wait to add the avocado until right before serving. If you let it sit too long the avocado will brown and it doesn't taste as good
* This also makes a great side dish with steak and chicken (I like to put it over the top of my steak as a garnish)
You can also use a light Italian dressing for an even healthier option...there is so much goodness in this salsa that it won't be lacking in taste.
