Pistachio Chip Cookies

  • 1 cup butter, softened
  • 1 (8oz.) package cream cheese, softened
  • 1 cup sugar
  • 1 egg
  • 1 tsp. vanill extract
  • 2¼ cups flour
  • 1 package (3.4 oz.) instant pistachio pudding mix
  • 1 tsp. baking powder
  • 1 cup dark chocolate chips or semi-sweet chocolate chips.
  1. In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Beat in the egg and vanilla.
  2. Mix in the flour, pudding mix and baking powder. Add the chocolate chips.
  3. Refrigerate for 1 hour so it is easy to handl.
  4. Roll the dough into 1" balls and place on a parchment lined cookie sheet.
  5. Bake at 350 degrees for 10-12 minutes.
  6. Cool on a wire rack.
  7. Store in an air tight container.
