Peppermint Chocolate Cake Batter Cookies

These little Peppermint Marshmallow Chocolate Cookies are the most perfect little cookie to leave for Santa.

Serves: 24-30 cookies
Ingredients
  • 1 box chocolate cake mix. (I used Devil's Food)
  • ⅓ cup Vegetable Oil
  • 2 eggs
  • 1 tsp vanilla
  • 10.5 oz Jet-Puffed Peppermint Marshmallows
Instructions
  1. Preheat your oven to 350 F.
  2. In a medium bowl mix together the cake mix, oil, eggs and vanilla.
  3. Spray a cookie sheet with cooking spray.
  4. Roll your cookies into 1 inch balls and line them on the cookie sheet.
  5. Press down the center of the cookie with your thumb, creating a space to place the marshmallows.
  6. Place the cookies in the oven for 4 mins.
  7. Remove the pan and place 4-5 marshmallows on top of each cookie.
  8. Place the cookies back in the oven and continue to bake for another 4-5 mins.
  9. Remove from oven and allow the cookies to cool.
  10. Repeat with the rest of the dough.
