Pumpkin Spice Swig Sugar Cookies

Sugar cookies with a pumpkin spice cream cheese frosting. OH MY GOODNESS. So good.

Ingredients
  • COOKIE:
  • 5¼ cups flour
  • ½ tsp baking soda
  • ½ tsp cream of tartar
  • 1 tsp salt
  • 1 cup softened butter (not melted)
  • ¾ cup vegetable oil
  • 2 eggs
  • 1¼ cup white sugar
  • ¾ cup powdered sugar
  • 1 tsp vanilla
  • 2 tbsp water
  • FROSTING:
  • 1 8 oz block cream cheese
  • 1 stick of softened butter (1/2 cup)
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 1-2 tsp pumpkin spice extract (Add 1 or 2 tsp based off of how much pumpkin spice you like)
  • 5 cups powdered sugar
  • 1 drop of red food coloring
  • 5-6 drops of yellow food coloring
Instructions
  1. COOKIE DIRECTIONS:
  2. Preheat the oven to 350 degrees F
  3. In a large bowl cream together with a hand mixer the butter, eggs, oil, water and vanilla.
  4. Add in the white sugar and powdered sugar and mix together.
  5. Add in the baking soda, salt and cream of tartar and mix well.
  6. You will now the flour 1 cup at a time. Mix each cup and then add another.
  7. The dough should not be sticky.
  8. Roll the dough into 2 inch balls and line them on a cookie sheet. ( I do about 3 per row)
  9. Using a cup or mason jar press down the bottom of the cup onto the cookie dough balls.
  10. (Spray the bottom of the cup or jar with a little bit of cooking spray to prevent the dough from sticking to the cup)
  11. You will flatten out the cookie to about ½ an inch thick. The edges should look like they are cracking.
  12. Place the pressed cookie dough into the oven for 8 mins. (Don't cookie any longer)
  13. Remove from oven and let cool before frosting.
  14. Repeat til all the cookie dough is cooked into cookies.
  15. FROSTING:
  16. In a medium sized bowl mix together the cream cheese and butter using your hand mixer. Mix till well blended.
  17. Add the vanilla, pumpkin spice, and salt and mix well.
  18. Add in the powdered sugar one cup at a time, mixing together in between each cup.
  19. Mix in the food coloring. (careful with how much red you add)
  20. Mix the colors together to get a nice orange frosting.
  21. Your frosting should be be nice and creamy.
  22. Using a butter knife frost the cookies.
  23. ENJOY!
