This Chicken Enchilada Soup is not only delicious, but will warm you up on those cool fall evenings.

Ingredients
  • 1 lb. chicken cooked (or 1 package of Tyson precooked frozen diced chicken)
  • 1 red bell pepper diced
  • ½ onion diced
  • 2 garlic cloves, pressed (or 1 tsp. minced garlic)
  • ⅓ cup flour
  • 2 Tbs. Butter
  • 2 cans Enchilada Sauce
  • 2 can black beans, drained and rinsed
  • ¼ cup snipped cilantro
  • 2 T. lime juice
  • 5 cups chicken broth
  • Sour Cream
  • Cheddar Jack Cheese
  • Tortilla Chips
Instructions
  1. In a large pan, melt 2 Tbs. butter and saute the onion, pepper and garlic.
  2. Add the flour and stir.
  3. Add the chicken broth, enchilada sauce and stir.
  4. Add the precooked chicken and beans.
  5. Bring to a boil, reduce heat and simmer to cook.
  6. Add the cilantro and lime juice and heat through for about 5 mins.
  7. Serve with sour cream, cheese and tortilla chips.
  8. ENJOY!
