2 lb. boneless skinless chicken breast tenders (cut into quarter size cubes)
2 tbsp of olive oil for cooking chicken
½ c. low-sodium soy sauce
½ c. honey
2 tsp minced garlic
Juice of 2 limes ( about 3-4 tbsp lime juice)
¼ c..sesame oil (may substitute with olive oil)
3 tbsp. cornstarch
Sesame seeds and scallions for garnish
salt and pepper
Instructions
Preheat oven to 350 degrees
Dice Chicken breast tenders into small bite size pieces, then salt and pepper
Make glaze in medium bowl by whisking together soy sauce, honey, minced garlic, lime juice, and sesame oil
Whisk in corn starch to thicken, then set glaze aside
Cook cubed chicken pieces in frying pan over medium heat with 2 tbsp of oil (about 3 min on each side just until lightly browned on outside)
Grease a 9x 13 caserole dish with cooking spray and then spread chicken pieces in pan
Drizzle the glaze evenly over the chicken
Place in oven and bake for 20 minutes @ 350 degrees
Remove from oven and spoon the glaze from the bottom of the pan back over the chicken
Heat the oven up to a broil and then place chicken back in the oven for 2-3 minutes
Remove from oven,and garnish with scallions and sesame seeds
Serve over rice
Notes
Do not be concerned it your glaze appears to be on the watery side when you first mix it up. I promise it will thicken up to a more glaze like consistency after cooking and broiling.
