Piña Colada Cupcakes

Serves: 24 cupcakes
Ingredients
  • CAKE
  • 1 box vanilla cake mix
  • 2 eggs
  • ½ cup buttermilk
  • ½ cup sour cream
  • 1 tsp coconut extract
  • 1 8 oz can crushed pineapple drained
  • ¾ cup shredded coconut flakes
  • FROSTING
  • 1 8 oz block cream cheese
  • ½ cup softened butter (Not melted)
  • 6 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 2 tsp coconut extract
Instructions
  1. Preheat your oven to 350 degrees F
  2. Line your cupcake pan with cupcake liners
  3. In a medium size bowl mix together the cake mix, eggs, buttermilk and sour cream.
  4. Add in the pineapple and coconut flakes and blend all together
  5. Fill each cupcake liner ¾ of the way full
  6. Put in the oven for 17 minutes
  7. Pull out of the oven and let cool before frosting
  8. In a separate bowl mix the cream cheese, butter, vanilla, almond and coconut extracts together until nice a smooth.
  9. Add in the powdered sugar 2 cups at a time and cream together the frosting til you have added all the powdered sugar.
  10. Frost the cupcakes however you like and top with some shredded coconut flakes
  11. Optional: Add a maraschino cherry and pineapple chunk to the top to make them prettier :)
