Slow Cooker Fiesta Chicken and Rice

Ingredients
  • 2 (10 oz.) cans Rotell Diced Tomatoes and Chilis
  • 1 (15 oz.) can tomato sauce
  • 2 (15 oz.) can Black Beans, drained and rinsed
  • 1 cup frozen corn
  • 1 pkg. Taco Seasoning
  • 2 cups water
  • 2 lbs. boneless, skinless chicken breasts cut bite size pieces
  • 1½ cups parboiled long grain white rice
Instructions
  1. Add all ingredients except the rice to your slow cooker.
  2. Cook on low for 6 hours.
  3. Add the rice and continue to cook for 30 more minutes.
  4. When serving, top with grated cheddar cheese.
  5. DELICIOUS!
