Nanny's Red Beans & Rice

Ingredients
  • Leftover boned ham, (I like to leave some meat on it)
  • 1 onion chopped
  • 1 lb. small red beans (I sometimes use black beans)
  • 1 tsp. Lemon Pepper
  • 2 tsp. garlic salt
  • Pepper
  • 1 green pepper chopped (optional)
  • 6 Cups water
Instructions
  1. Crock pot method:
  2. Sort beans to make sure there are no small rocks in them. Place in a pot with 6-8 cups of water.
  3. Remove any that float to top. For quick method, you can boil the beans for 1 minute then cover and let sit for 1 hour. For overnight method, cover them with 6-8 cups of water and let sit overnight.
  4. Drain, then add to your crock pot. Add ham, onion, green pepper, seasonings and 6 cups of water.
  5. Cover, and cook on low for 6-8 hours.
  6. Serve over rice.
  7. Stove top method:
  8. Same as above for preparing beans.
  9. Place beans, ham, green pepper, onion and seasonings in a large pot. Cover with water. Bring to a boil and simmer for 1½ hours until beans are soft. Remove ham and take meat off of bone and return to pot. Cover and cook for at least another hour or so or until it starts to thicken.
  10. Serve over rice.
