Creamy Potato Soup

Ingredients
  • ½ cup butter
  • 3 celery stalks (chopped)
  • 3 green onions (chopped)
  • 3 large carrots (grated)
  • 2 cans chicken broth
  • 3 cans Cream of Potato Soup
  • 1 cup frozen hash browns
  • 10 oz. cheddar cheese
  • 1 cup sour cream
  • 1 soup can of milk
  • Salt and Pepper to taste.
  • (Can add broccoli, chicken, bacon, mushrooms, or the kitchen sink if you like!)
Instructions
  1. Sauté carrots, celery and onion in butter in a large soup pot.
  2. Add hash browns and chicken broth and simmer for 15 minutes.
  3. Add soup, milk, and cheese.
  4. Heat thoroughly, stirring often.
  5. Add sour cream by blending thoroughly and heating through.
  6. Add salt and pepper.
  7. Serve in bread bowls if you like!
