Creamy Potato Soup

- ½ cup butter
- 3 celery stalks (chopped)
- 3 green onions (chopped)
- 3 large carrots (grated)
- 2 cans chicken broth
- 3 cans Cream of Potato Soup
- 1 cup frozen hash browns
- 10 oz. cheddar cheese
- 1 cup sour cream
- 1 soup can of milk
- Salt and Pepper to taste.
- (Can add broccoli, chicken, bacon, mushrooms, or the kitchen sink if you like!)
- Sauté carrots, celery and onion in butter in a large soup pot.
- Add hash browns and chicken broth and simmer for 15 minutes.
- Add soup, milk, and cheese.
- Heat thoroughly, stirring often.
- Add sour cream by blending thoroughly and heating through.
- Add salt and pepper.
- Serve in bread bowls if you like!
