2 pkgs. frozen Baby Broccoli Florets (17 oz. pkgs.)
2 cans cream of chicken soup
1 cup mayonnaise
1 Tbsp. lemon juice
1 Tbsp. curry powder
1½ cups shredded American cheese
1 cup bread crumbs
2 Tbsp. butter, softened
Salt and pepper to taste
Instructions
Cook the chicken breasts and cut them into cubes.
In a greased 9x13 casserole dish, place the broccoli on the bottom and then put the cubed chicken on top.
Add a few shakes of salt and pepper.
In a bowl, combine the soup, mayonnaise, lemon juice, and curry powder together.
Pour the mixture over the chicken and broccoli. Sprinkle the cheese on top. In a small bowl mix the bread crumbs and softened butter together.
Spread bread crumbs over the top of the cheese.
Cover with foil and cook in a 350 degree oven for 40 minutes or till heated through.
Notes
You can use 1 box of stove top stuffing (corn bread or chicken) instead of the bread crumbs. I sprinkle the stuffing on top and drizzle ¼ cup melted butter over the top. Delicious!!
If you want to make it a little easier, use frozen cooked diced chicken instead. Easy
