Contrary to popular (or unpopular) belief, you don’t have to wait for Autumn in order to cook a delicious pumpkin dessert. I absolutely love this pumpkin cupcakes recipe! It is not only yummy but is is also incredibly easy to make. You can decorate the frosting tops for whatever occasion you’re making them for and then complement the look with a delectable taste.
No matter how you present them, I am sure these Harvest pumpkin cupcakes will be a hit with the lucky ones who get to enjoy them!
- 1 box spice cake mix
- 1 cup pumpkin puree
- 1 tsp. vanilla extract
- 2 eggs
- ½ cup milk
- 1 cup chocolate chips (I use semi-sweet)
- 1 cup butterscotch chips
- Mix all ingredients. Pour batter into paper liners and fill ¾ full.
- Bake at 350 degrees for 15-18 minutes.
- Let cool
- Frosting:8 ounces cream cheese, softened
- /2 cup butter softened
- /4 cups powdered sugar
- tsp. vanilla extract
