Banana Nut Pudding Cookies

Ingredients
  • ¾ cup butter, softened
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 2 eggs
  • 1 large banana, mashed
  • ¼ cup sour cream
  • 1 tsp. vanilla
  • 1 (3 oz.) box banana cream instant pudding
  • 2½ cups flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • ¾ cup white chocolate chips
  • ½ cup chopped walnut
  • Sugar for sprinkling
Instructions
  1. Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter and sugars. Add the banana, eggs, vanilla, sour cream and mix well. Mix in the pudding mix.
  3. Gradually add the flour, soda and salt.
  4. Mix in the chocolate chips and nuts.
  5. Since these are little more gooey than regular pudding cookies, I just drop them on to the cookie sheet rather than try to roll them into balls.
  6. Sprinkle the cookies with sugar.
  7. Bake for 10-12 minutes. ( I like my cookies a little undercooked so I cook them for 10 min.)
  8. Cool on a wire rack.
