Slow Cooker Pork w/ Apple Berry Stuffing

Ingredients
  • 8-10 thinly sliced Pork Tenderloins
  • 1 box Mrs. Cubbisons Herb Seasoned Stuffing
  • ½ cup melted butter
  • ¼ cup apple juice
  • ¾ cup Chicken broth
  • 1 small onion diced
  • 2 celery stalks chopped
  • 1 cup dried cranberries
  • 1 fuji apple (cut into nickle size pieces)
Instructions
  1. Chop apple, celery and onion
  2. Mix all ingredients (except Pork) in a large Mixing bowl
  3. Spray Slow Cooker with cooking spray
  4. Layer ½ of stuffing mixture on the bottom of the crock pot
  5. Next layer 4-5 thinly sliced Pork Tenderloins
  6. Spread another ⅓ of stuffing over the pork
  7. Repeat by placing another layer of 4-5 Pork Tenderloins
  8. Top it off with remainder of stuffing mixture
  9. Replace the lid and Cook on low heat for 6-8 hours
Notes
We love this served with turkey gravy and a side of homemade mashed potatoes

If you would like to make some Slow Cooker Stuffing without the pork, just leave out pork and add an extra ¼ cup butter, and ¼ cup apple juice to the mixture

This would be great served with Turkey at Thanksgiving dinner!

If time is an issue cook on high for 4 hrs (instead of low for 6-8)
