Chicken Enchilada Soup

- 1 lb. chicken cooked (or 1 package of Tyson precooked frozen diced chicken)
- 1 red bell pepper diced
- ½ onion diced
- 2 garlic cloves, pressed (or 1 tsp. minced garlic)
- ⅓ cup flour
- 2 Tbs. Butter
- 2 cans Enchilada Sauce
- 2 can black beans, drained and rinsed
- ¼ cup snipped cilantro
- 2 T. lime juice
- 5 cups chicken broth
- Sour Cream
- Cheddar Jack Cheese
- Tortilla Chips
- In a large pan, melt 2 Tbs. butter and saute the onion, pepper and garlic.
- Add the flour and stir.
- Add the chicken broth, enchilada sauce and stir.
- Add the precooked chicken and beans.
- Bring to a boil, reduce heat and simmer to cook.
- Add the cilantro and lime juice and heat through for about 5 mins.
- Serve with sour cream, cheese and tortilla chips.
